Bacon and Mushroom Alfredo with Sun-dried Tomatoes

A simple and fast recipe for the backcountry pasta lovers!

This recipe was created for a recent project with Jetboil, which was seriously so much fun. We headed out for our first official backpacking trip of the season and were rewarded with some great weather and breathtaking views of the Rockies!

When I say this recipe is simple and fast, I really mean it! It’s also relatively lightweight, which is ideal for the hangry backpacker. The combo of a dry Alfredo sauce package, dried mushrooms, sun-dried tomatoes, and a little bit bacon bits keeps this recipe lightweight and packable, but makes sure to deliver on flavour!

To make this recipe, boil water and add to the dried mushrooms to allow to rehydrate while you prep the rest. Boil more water and add dried pasta. Cook until tender, strain, then add your Alfredo package, mushrooms, bacon bits, and sun-dried tomatoes. Stir and enjoy! From start to finish you’re looking at 10-15 minutes, faster than most store bought dehydrated meals!

Feel free to experiment with the additions you prefer. Leave out the mushrooms and add some other dried vegetables if you’d like. Or cut up some jerky that you have with you already and forget about having to bring bacon. There’s definitely room to play around with this recipe! You can even trade in the Alfredo package for a pesto sauce or a tomato based sauce. There’s lots of affordable options at your local grocery store. Just look in the pasta section for dry pasta mixes!
