Giant S’mores Skillet Cookie
Nothing says camping like s’mores around the campfire. Now add a giant chocolate chip cookie and you got the perfect sweet ending to a summers day! Make sure to get some extra spoons, this one is definitely to share!
Really, is there anything more classic when camping than s’mores around the campfire? Sweet, sticky, gooey and fun! I wanted to combine all of those things into a skillet cookie, because.. well, why not? Who doesn't love a freshly baked chocolate chip cookie too!
I made this with two layers of cookie dough on the bottom and top with a marshmallow/graham cracker layer sandwiched in the middle. I used store-bought cookie dough just to keep it simple and fast but you could definitely use your own homemade cookie dough recipe!
Instructions
Start your campfire 30-45 minutes early to get some coals to bake with. Have a campfire grate ready nearby. I wouldn’t suggest cooking right on top of the coals as it will be too hot and likely burn the bottom before it’s fully cooked through.
Press the first cookie dough roll into the bottom of a 8 or 10-inch cast iron pan. Sprinkle with mini marshmallows, broken pieces of graham crackers, and extra chocolate chips (optional). See above photos for reference.
Take the second cookie dough roll and break off golfball-sized chunks, placing them on top of the marshmallows/graham cracker/cookie dough layers. Gently press down a little to fill in the gaps (you don't have to cover the marshmallow layer completely, it's fine if some stick out between the cookie dough chunks).
Cover your cast iron pan with a cast iron lid (I used the one from my Dutch oven).
Place your campfire grate over the fire and put your pan on top of the grate. Add 10-12 small coals on top of the lid. Bake for 15-20 minutes until cookie is browned and centre is no longer wobbly. Be careful not to let it burn!
TIP: Make sure to check your cookie around 10 minutes. If it looks like the bottom is starting to brown/burn and the centre is still very raw, move the pan to a cooler part of the grate (further away from the fire).
Top with a few scoops of ice cream and dig in!
This is quite a sweet dessert so I advise sharing with your family and/or friends to avoid a stomach ache!
