Leftovers Skillet

The perfect brunch to use up those leftovers from a BBQ the night before!

This has been a classic in my family for years. We often make extra baked potatoes just so that we can make this the morning after a big BBQ. There’s nothing fancy about this recipe. Just good ol’ using up leftovers in a delicious, easy way!

As the name suggests, this is a leftovers recipe, so really it’s about using what you have and not necessarily sticking strictly to a recipe. In saying that, here’s what we usually use for this meal:

  • baked potatoes or potato wedges/cubes

  • steak or garlic sausage (chicken would work fine too)

  • corn

  • onions

  • cheese

Additions to consider:

  • bell peppers

  • black beans

  • leftover roasted vegetables (zucchini, mushrooms, asparagus, etc.)

  • sweet potato

  • eggs

Usually we keep the spices similar to what was on the potatoes or steak. In this case it was Montreal Steak Spice.

Start by sautéing the onions in some olive oil or butter. Add your vegetables and sauté a little longer until everything is warmed up. Add your potatoes and sauté until they start to crisp up. You may need to add a little more oil/butter at this point to prevent everything from sticking. Once everything is nearly done, add your steak. If you’re like me and like your steak medium-rare, you don’t want to add it at the beginning because it will overcook by the time everything is warm and crispy. Add your cheese and let that melt. Then you’re ready to eat!
