To be completely honest, I’ve never been a huge “meal prepper”. It’s funny because my work as a dietitian has lead to many many conversations with clients about meal prepping to save time, money, and reduce stress around cooking during the busy work weeks. I get why meal prepping is helpful but I guess I never really grew up with my family doing it. My parents often cooked the day of and didn’t usually do “planned leftovers” - the idea of intentionally cooking more than you need for the meal so that you have enough for multiple meals later in the week.

All this to say, I’m slowly exploring what meal prepping looks like for me. I love to bake, so naturally the first foods I’m gravitating towards for meal prep are baking recipes. I love batch baking muffins or cookies for snacks, and recently I’ve been exploring breakfast options. And so I give you - baked oatmeal cups!

Baked oatmeal is a great option for meal prep breakfasts for a few reasons:

1) They’re easy to make a balanced meal (carbs, protein, fat, fibre). The oats are a great source of complex carb that will provide your brain and muscles with energy. The milk, eggs, and nuts provide protein and healthy fats to support muscle growth and keep you feeling full longer. And the fruit gives you that extra boost of vitamins and fibre. All these nutrients packed into a portable little oat cup!

2) They’re easy to make lots of individual portions that are portable and easy to bring along to work, the gym, school, etc.

3) You can easily make multiple different flavours in the same batch so that you have variety for the week ahead!

Ingredients

For the base of the oatmeal cups, you’ll need:

  • Large flake rolled oats

  • Cinnamon

  • Baking Powder

  • Salt

  • Milk

  • Maple Syrup

  • Eggs

  • Vanilla

There’s many different flavour combos you can try, but the 3 I included in this recipe are:

  • Chocolate chips

  • Blueberries, coconut flakes, and walnuts

  • Apple cubes and walnuts

Instructions

This recipe is fairly simple, which makes it even better for meal prepping!

First, mix all the ingredients of the oatmeal cups base together in a large bowl. If you’re adding different flavours, divide the mixture evenly into separate bowls.

Add your desired toppings/flavours like chocolate chips, cubed apples, or blueberries. Fold together until well combined.

Spoon mixture into greased muffin tins until full.

Bake in the oven at 350F (177C) for 25-30 minutes until lightly browned. Remove and let cool slightly before enjoying with a drizzle of maple syrup or a spoonful of yogurt.

Storage

Store in a sealed container in the fridge for up to 5 days. In my opinion, they’re best enjoyed reheated in the microwave and with either a drizzle of maple syrup or a spoonful of yogurt on top - or both!

These can also be frozen and stored in the freezer for up to 3 months. Make sure to allow them to cool completely after baking before putting in the freezer in a sealed container.

  • 1/2 cup maple syrup

Flavour Combos - Chocolate Chip
  • 1/2 cup chocolate chips
Flavour Combos - Blueberry-Coconut
  • 1/2 cup blueberries
  • 1/4 cup coconut flakes
  • 1/4 cup walnut pieces
Flavour Combos - Apple-Walnut
  • 1/2 cup apple cubes
  • 1/4 cup walnut pieces
