Peach and Walnut Baked Brie
A decadent appetizer that makes you feel uber fancy but is so quick and easy even your kids can make it!
I love cooking with others and being inspired by their creative ideas (and tastebuds!). This particular recipe came from my good friend Jan, when we were out camping a few weekends ago when she rocked up to the campfire at 10:30pm and proceeded to create the most delicious charcuterie board with smoked salmon and you guessed it, baked brie! Jan is no professionally trained chef, but damn does she know how to cook. You know when you’re going over to her place for dinner that you will leave happy and full. I love those kinds of friends.
So if you’re looking for a decadent and sure-to-impress appetizer, this is the one! You can totally experiment with different fruit jams to find your favourite flavour combo too. Fig jam is another winner!
I’m all about creating delicious but easy recipes, because lets be real, we all love good food but don’t always have the time to make it! And when I say this one is easy, I really mean it!
Start by unwrapping the brie from the package and wrapping it in a layer of tinfoil. Place on the fire grate above the fire or on some hot coals. Make sure to watch it, depending on how hot your fire is, it might only take a few minutes! Bake brie over the fire until soft and gooey when you touch it, approximately 5-10 minutes.
Remove from the fire and open up carefully. Spread a good spoonful or two of peach jam on top of the warm brie. Sprinkle with walnut pieces and some freshly sliced basil leaves. Dip in with crackers or bread!

- 2-4 Tbsp peach jam
- handful of walnut pieces
- 1 Tbsp fresh basil, sliced
- crackers or baguette slices
