Crunchy Peanut Butter Cookies
If you love peanut butter, you’re going to love these! Perfect for a trail snack or enjoyed at home with a cup of coffee!
Now you’ve probably noticed by now that I have a slight peanut butter obsession. And you’re right. And these cookies are adding to the long list of things I LOVE with peanut butter. I mean, who doesn't love a good cookie, right?
You can either make this a classic smooth cookie (with no extra peanuts) or crunchy by adding peanuts to the dough. I’ve made them both ways and they’re both delicious!
There’s really nothing complicated about this recipe. Cream the sugar and butters, add your eggs and vanilla, and then add your flour and baking soda. Stir together and add your peanuts at the end if desired! No chilling needed. Bake for 10 mins, try and not devour them immediately out of the oven (I suggest waiting at least 5 minutes for them to cool) and then enjoy!

Crunchy Peanut Butter Cookies
Ingredients
- 1/2 cup butter
- 1/2 cup peanut butter (I used natural, crunchy)
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 1/4 cup flour
- 3/4 tsp baking soda
- 1/4 cup salted peanuts (optional, but encouraged)
Instructions
- Preheat oven to 375F. Grease a baking sheet or line with parchment paper.
- Cream together butter, peanut butter, and sugars.
- Add eggs and vanilla, mix. Stir in flour and baking soda.
- Add peanuts and stir until incorporated into the dough.
- Using your hands or a cookie scoop, roll dough into medium sized balls and place on cookie sheet.
- Bake for 10 mins.
