Combining all the delicious ingredients of perogies into a more backpacking friendly version! This is a delicious, filling, and easy one-pot backpacking meal!

Backpacking season is upon us and that means dusting off the gear and starting to plan camping menus! I’m always on the look out for delicious, filling, easy, and AFFORDABLE backpacking meals. This ticks all the boxes and you can easily buy all ingredients from your local grocery store! I call it “lazy” perogies because it’s deconstructing the flavours of perogies into a one-pot meal.

If you’re skeptical about dried mashed potato mix, trust me, I was at first too, but you just gotta give it a try! It makes for some delicious, easy, and filling backpacking meals!

Ingredients

Using instant mashed potato mix as the base and then adding your choice of additions! This recipe is geared towards a potato, bacon, and cheese style of perogie. What you’ll need:

- lasagna sheets, broken up
- 1 instant mashed potato mix (garlic & herb flavour adds some extra deliciousness)
- skim milk powder (if required by the potato mix you choose)
- cheese string or shredded cheese
- pepperoni sticks or bacon
- fresh green onion (optional but recommended for a little sprinkle of something fresh)

Instructions

Cook the pasta noodles until tender. Turn off the heat and add the mashed potato mix and skim milk powder then mix together well. Add the sliced cheese and pepperoni and top with green onion. Enjoy!
