Anyways, I’m really stealing the thunder from this recipe. Regardless of whether you have had a classic grilled cheese before or not, you need to try adding basil pesto and sun-dried tomatoes. It takes grilled cheese to another level and adds SO much flavour. Trust me, you just gotta try it.
What You Need and What To Do
The recipe is incredibly simple. Grab your favourite bread, slap on some cheese (I would recommend a mild-ish cheese like provolone, mozzarella, or havarti), add a spoon of basil pesto and some sun-dried tomatoes (choose the tomatoes in oil), sandwich together and grill on both sides in a pan on medium-heat. Done. Delicious. And repeat.

Pesto Grilled Cheese
Ingredients
- 4 slices thick cut bread
- 1/2 cup shredded mozzarella cheese
- 2-4 tsp basil pesto
- sun-dried tomatoes, in oil
- butter for grilling
Instructions
- Butter one side of each of the slices of bread. This will help get the perfect golden brown crust when grilling.
- Spread basil pesto on the other side of each slice of bread. Add as many sun-dried tomatoes as you wish.
- Add 1/4 cup shredded cheese and cover with the other slice of bread (butter side up).
- Fry in a pan on medium heat, flipping till you get the perfect golden brown crust on both sides.
