Campfire Pumpkin Spice Latte

In full transparency, I am not really a big pumpkin fan. Pumpkin pie, pumpkin muffins, pumpkin soup... just not really my jam. Give me anything with chocolate on the other hand, and I’m one happy gal. But every fall, without fail, there is a rampage of pumpkin-everything in stores, online, and of course, at pretty much any coffee shop. And I figured this year, I should probably give pumpkin another shot by making a homemade PSL (pumpkin spice latte), and I must admit, I was quite pleasantly surprised.
This recipe incorporates real pumpkin puree which gives the drink an authentic pumpkin flavour (not just from a flavoured syrup) and maple syrup that brings in that delicious sweetness that isn’t overpowering. And we can’t forget the whipped cream on top - a must in my opinion. Keep reading as I walk you through how to make this over the campfire!
Ingredients
Before making this cozy fall drink, gather the following ingredients:
milk - I used 2% cows milk but feel free to substitute with your milk of choice. I’m thinking next time I’m gunna try coconut milk for an extra creamy version.
canned pumpkin puree, or homemade if that’s the way you like!
maple syrup - honey or agave would work too but there’s something about the maple flavour that I personally can’t part with.
pumpkin spice - store-bought or homemade. I used this recipe to make it from scratch: Homemade Pumpkin Spice Recipe
strong coffee - I used Hiker’s Brew Vanilla Flavoured Coffee and omitted the vanilla extract below
vanilla extract - for that little vanilla kick (optional if using vanilla flavoured coffee)
whipped cream - use coconut whip for a vegan alternative
Instructions
Start by making a strong cup of coffee using a pour over, moka pot, or your preferred way of brewing. Divide between two mugs. I love using Hiker’s Brew Adventure Pouches when we’re on the road or hiking because they’re the perfect amount for 2-4 people.
Next, warm milk, pumpkin puree and maple syrup together in a pot over the fire using a fire grate, stirring regularly. My go-to fire grill is Wolf and Grizzly’s Campfire Trio set. Once steaming, remove from heat and add pumpkin spice and vanilla. Add evenly to the two coffee mugs.
Top with whipped cream and a little extra spice (optional but highly recommended).
