Coconut French Toast
A delicious little spin on the classic French toast!
I feel like one of the big questions when it comes to breakfast food is, savoury or sweet?
What’s your preference? Honestly, it depends on the day for me. I love both. So if you’re feeling like a sweet breakfast (don’t worry, it’s not tooooo sweet), this is a recipe for you! French toast is easy, delicious, and fun!
Most bread works for French toast, but I definitely would recommend using a thick cut bread.
To make the French toast, whisk your eggs and milk together then add the cinnamon and coconut and give it a quick stir. Dip your bread (BOTH SIDES!) into the mixture, letting it soak for a few seconds on each side. Then cook on a skillet at medium heat for 3-5 minutes each side, until it’s golden brown and slightly crispy.
Load up with whatever toppings you like! Some suggestions are fresh fruit, greek yogurt, peanut butter, nuts, extra coconut flakes, or icing sugar. If you really want to keep it classic, butter and maple syrup is the best!

Coconut French Toast
Ingredients
- 4-6 slices of thick-cut bread
- 1 egg
- 2-3 Tbsp (30-45mL) milk
- dash of cinnamon
- 1 tsp (2g) unsweetened shredded coconut
- Greek yogurt
- strawberries (or fruit of choice)
- almond slivers
- extra shredded coconut
- maple syrup
- whipped cream
- icing sugar
Instructions
- Heat skillet on medium-high heat. Add butter or oil if not non-stick.
- Whisk together the egg and milk in shallow bowl. Add coconut flakes and cinnamon, stir.
- Dip bread slice into the mixture, let soak for a few seconds, then flip to cover both sides.
- Place bread in hot skillet and cook 3-5 minutes each side until golden brown.
- Top with desired toppings and enjoy!
