5-Minute Breakfast Sandwich

A quick, easy, and delicious start to your day! This 5-minute breakfast sandwich makes breakfast a breeze!

If you know me, you know I’m a big breakfast girlie. Toast, oatmeal, waffles, eggs, I love it all. But what I also understand is that a lot of people don’t have a ton of time in the morning to make breakfast, so it’s often something super quick and maybe even on-the-run.

This 5-minute breakfast sandwich takes only, you guessed it, 5 minutes, and gives you a great balanced, satisfying, and filling breakfast that will keep you fuelled for hours.

Ingredients

  • Eggs & Cheese - a great source of protein to keep you full and support your muscles.

  • Bread - I would argue bread is a necessity in order to call it a sandwich. I know some people replace it with things like lettuce (like a lettuce burger) but that just doesn’t do it for me. Your body needs carbs, it’s your main form of energy! If you just really don’t like bread, tortilla wraps, bagels, or English muffins would work great in this recipe too.

  • Bacon - optional, but definitely tasty. To keep this recipe under 5 minutes, have the bacon pre-cooked or leftover from another meal. You could also easily substitute the bacon for a slice of ham or other deli meat, or just omit completely.

  • Other toppings - I added avocado, tomato, and lettuce for some freshness and crunch. And of course, hot sauce for some heat. Feel free to get creative with what you like or have on hand.

Instructions

Start by heating your pan to a medium heat over the campfire or camp stove with a little olive oil. Whisk eggs in small bowl then add to the pan.

Immediately add the two slices of bread to the eggs, dipping quickly in the uncooked egg (like if you were making French Toast) then flipping over and positioning them end to end in the pan (like a mirror) on top of the eggs. This will create a “French Toast” like coating on the outside of the breakfast sandwich and allow it to fry without drying out or burning.

Let cook for a couple of minutes and then flip over the whole thing (eggs and toast) so that the scrambled eggs are facing up and the bread is on the bottom (please see video example linked for reference).

Now add all your toppings for the sandwich like cheese, bacon, avocado, tomatoes, lettuce and hot sauce on top of the cooked eggs. Then "close" the sandwich by carefully flipping one of the sides of bread over onto the other, with the toppings in between like a sandwich.

  • 2 slices bread of choice
  • 2 slices bacon
  • tomato slices
  • avocado slices
  • lettuce
  • hot sauce (optional)
  • salt and pepper
  • olive oil, for cooking the eggs
