Loaded Breakfast Burritos

I’m a BIG brunch gal. Whether it’s cooking at home or going out to eat, I find brunch foods are comforting, satisfying, and just plain delicious. So if you’re like me, this is a great breakfast or brunch recipe to add to your camping menu! It’s all the foods of a classic eggs and bacon breakfast wrapped in a delicious burrito. Heck, even switch it up and have it for dinner! I love a good breakfast-for-dinner now and then.
Alright, let’s get to the recipe.
What You’ll Need
Eggs - scramble them, fry them, whatever is your fav! In my opinion, scrambled works best for burritos. It’s also much easier to make for larger groups rather than trying to fry 15 eggs all at once.
Bacon - crispy is the only way to go if you ask me. Some alternatives would be deli ham, leftover BBQ meat from the night before (I’m thinking brisket or steak - DELISH), or maybe some turkey bacon.
Cheese - I love a classic cheddar with eggs and bacon, but go as fancy as you wish! Smoked gouda, brie, or whatever else you have hiding in your cooler.
Veggies - pump up the nutrients (and flavour) by adding diced onion, red pepper, avocado, fresh tomatoes, spinach, and some fresh parsley on top. Brings in some bright colours which always makes it more appealing to the eyes (I like my food looking good too haha).
Hash browns - homemade or store bought, diced or rounds, there’s no wrong way to eat potatoes in my opinion (other than raw, I guess, don’t do that).
Tortilla wraps - use flour or corn, depending on your dietary or taste preferences. You can even go for small tortillas and make breakfast tacos instead. TIP: after wrapping up the burrito, fry in the pan for a few minutes with the seam side down at first. This gives them a nice little crisp on the outside.
How to Make
Start by cooking bacon and hashbrowns on medium heat until crispy.
In a separate pan, sauté onion and bell pepper, then add eggs and scramble to perfection. Top with a little cheddar cheese if you’d like.
Time to assemble the burrito. On a large tortilla, add hash browns, eggs, bacon, fresh tomato, avocado, hot sauce, and wrap tightly together. Enjoy warm!
How to Store or Meal Prep
Breakfast burritos are actually a great meal prep food! You can make them ahead of time and freeze them and then reheat at a later day for an easy and delicious breakfast. Here are my tips for meal prepping burritos:
Cook ingredients as you normally would and then let cool completely before assembling burritos.
Wrap burritos individually in tin foil and place in a resealable bag. Freeze for up to 1 month.
Reheat by microwaving for 4-6 minutes or in a dutch oven over the campfire for 20-30 minutes.
