Campfire Nachos

Super tasty, easy and perfect around a campfire with a beer in your hand. Sounds pretty great, right? Right.

First recipe up on the blog, yay! Stoked about these cause they’re SO easy, yummy and versatile. Claudio and I had them for the first time as our anniversary dinner when camping in the mountains (yes, we went camping to celebrate our first year of marriage, and it was perfect). There’s just something about making them over the campfire that adds a little extra smoky deliciousness.

It’s really up to you and your imagination to decide what toppings you’d like. You could add diced red onions instead of green onions, beef instead of chicken, or just do good ol’ classic cheese nachos. Up to you and your taste buds!

So the nachos are the easy part. What takes a bit of time figuring out is having your campfire set up right for cooking the nachos. If you have a campfire ring with a grate already on it, you can just set your pan right on top of the grate and off you go. If you’re cooking without a grate or something you can set your pan on, you will have to pull coals from the campfire and cook on them.

Note: make sure you’re using a pan that can handle the campfire heat (no plastic handles, etc.) and you don’t mind getting a bit dirty. I use my trusty cast iron pan.

The tin foil lid is also an important component because you can place some hot coals on top of it which helps the cheese melt from the top down. Once cooking, the nachos should take 5-10 minutes, or until the cheese is melted and you are starting to see browning on the edge of your nacho chips. You don’t want to leave it for too long, as the bottom will start to burn.

Note: it’s helpful to have fire/heat resistant gloves and a good set of tongs to maneuver the coals and hot pan without burning yourself (speaking from experience - we now have good gloves and tongs hah). Please be careful or at least have a first aid kit on stand-by!

CAMPFIRE NACHOS

CAMPFIRE NACHOS

Smoky, cheesy and absolutely delicious! A quick and easy lunch or dinner for around camp.

Ingredients

  • 1 bag nacho chips
  • 1-2 cups cheddar cheese, shredded 
  • 2 chicken breasts, diced and cooked 
  • 1 can of corn, drained 
  • 2 green onions, chopped
  • 1 red bell pepper, diced 
  • salsa
  • guacamole

Instructions

  1. Start your campfire. This step is important! You want to create your fire in a way that will produce lots of coals for you to cook on.
  2. Cook chicken on camp stove (or ground beef - your choice!). Spice to your liking (I like to use a bit of chilli powder, paprika, cumin, salt and pepper).
  3. Dice up veggie toppings, drain canned corn, grate cheese. It's really up to you how many toppings you would like! When in doubt, extra cheese!
  4. Assemble your nachos by layering chips, meat, veggies and cheese. Depending on the size of your cast iron pan, you may be able to double or triple layers in one batch.
  5. Once your fire has a decent amount of coals, drag a small amount of coals out of the fire, making a flat pile that you can balance your cast iron pan on.
  6. Place pan with nachos on the coals. Cover pan with tin foil and place a 3-5 medium sized coals on top of tin foil lid. This will help the cheese melt from the top down.

Notes:

*I recommend using small-medium logs to get coals fast so that you can get cooking. Make sure to keep feeding your fire with new logs so that you have more coals to continue cooking. Be careful what wood you use. Keep in mind any type of treated wood may give the nachos a weird smoky flavour (speaking from experience!)
