Delicious Shrimp Scampi Pasta

A little spicy, a little zesty, and a whole lot of deliciousness! This simple shrimp scampi pasta is a great to-go meal when you’re not feeling like hotdogs over the fire again. Sure to impress any of your camping companions!

You probably read this all the time on food blogs (that’s IF you actually read the blog and don’t just skip down to the recipe, like me. Yes, I’m guilty of it too haha) BUT this is truly one of our favourite tried-and-true recipes that we make VERY often, whether it’s out camping or at home. It feels like a fancy dinner that has no business being made outdoors but it’s surprisingly quick to make, trust me! With a little chopping, you’ll have a delicious dinner on the table in no time.

This recipe was originally created for a fun project we were doing with our friends at Yama Vans and figured it needed a place on this site too!

Ingredients

Shrimp - I generally use frozen packaged raw shrimp for outdoor cooking because I find them a little easier to store (whether in a cooler or small fridge) and keep at a safe temperature. Usually I’ll buy them the day or two before I plan on cooking and let them slowly defrost in the cooler. If you’re a little weirded out by raw shrimp, you can definitely buy the pre-cooked frozen or refrigerated options too and just add them into the recipe a little later then recommended below (to still heat them up but not overcook them).

I love using shrimp as a protein because it cooks really quickly and is super versatile in dishes (pizza, pasta, stir fries, rice bowls, salads, you name it!).

Pasta Noodles - I prefer a long noodle like spaghetti or fettuccini for this recipe but anything would work in a pinch. Cook to al dente and then add to your finished sauce and mix together for a minute or two before serving.

Tomatoes, Shallots, & Garlic - these are really the main foundations of the sauce and I wouldn’t recommend skipping any of them unless absolutely necessary. If you don’t have shallots, onions would work as well.

White Wine - another key component to the sauce to really elevate the flavour. If you prefer alcohol-free, substitute with a good-quality chicken broth/stock.

Chilli Flakes, Lemon Zest, & Parsley - the finishing touches that make this dish sing. Chilli brings the heat, lemon a zap of zest, and parsley a beautiful fresh note. Add as much or as little, based on your preference.

Instructions

Start by sautéing the shallots in butter and 2 Tbsp olive oil in a pan on medium heat until translucent. Then add garlic, cherry tomatoes, lemon zest and chilli flakes and cook for a couple more minutes until the tomatoes soften and everything starts to blend together into a beautiful sauce.

Add the shrimp and cook until pink. Then add the white wine and cook for another 3-5 minutes to cook off a little bit of the alcohol. Finish with some fresh parsley.

Add the cooked pasta noodles and mix everything together. Serve warm and enjoy!

  • 300-400g spaghetti pasta
  • 1 package (~340g) frozen uncooked shrimp, thawed
  • 2-4 cloves garlic
  • 6 Tbsp butter
  • 2 shallots
  • 1 cup cherry tomatoes, halved
  • 1/2-1 tsp chilli flakes
  • Handful of fresh parsley
  • 1/2 cup white wine
  • Lemon zest from half a lemon

Instructions
