Easy Pesto Pasta
A quick 15 minute meal for those short on time! Refreshing, satisfying, and really easy!
I’m a big fan of quick and easy meals, especially while camping. It means you get more time to do everything else you love doing while camping, like soaking your feet in the river, exploring the woods around you, or just sitting back and relaxing with your friends.
This recipe is great because it takes just about 15 minutes to pull together and needs just a handful of ingredients!
The Ingredients
Pesto - I love basil pesto, but there’s many other types of pestos too! You could try a red pesto (made with sun-dried tomatoes and peppers) or arugula, spinach, mint, parsley, etc.!
Veggies - I love the combination of pesto and tomatoes, so I chose cherry tomatoes for this recipe. You could also swap out tomatoes for bell peppers, zucchini, corn, spinach, or whatever else you’d like!
Cheese - feta adds a creamy layer to this pasta dish. You could also add chunks of mozzarella or parmesan cheese instead.
This recipe is seriously SO simple and easy, just cook the pasta until al dente (tender but not mushy), drain, and add the pesto sauce, tomatoes, feta, and a little pasta water to mix it all together. You can serve it warm or cold, like a pasta salad.
